Heat the olive oil in a large skillet over medium heat. Add the frozen (or fresh) cauliflower rice and sauté until just cooked through, about 3-4 minutes. Once the cauliflower rice is cooked, transfer to a medium-sized bowl. In a small bowl, add the chopped chicken and about half of the buffalo sauce. Stir to combine. Transfer the buffalo chicken to the cauliflower rice and add the remaining buffalo sauce to the mixture. Stir to combine completely. Top with the green onions and blue cheese. Serve immediately and enjoy!
