One of the things I look forward to most on Christmas morning are the breakfast casseroles. I know, it probably sounds crazy, but this is one of the few mornings that it seems alright to indulge in the “not so healthy” breakfast foods. My mom usually makes a french toast bake and egg casserole, both of which are fan favorites. I thought I would take my mom’s usual egg casserole recipe and make a few changes, including adding hash browns, for a different spin. The hash browns were the perfect addition! I have shared my love for crockpot dishes before, but I think we have a new favorite in our house. Now that it is fall, I have been trying to do crockpot dinners at least twice a week. Not only do I love the ease of these recipes, but there is no beating a quick and warm dinner on a cold fall evening. I made this recipe a few weeks ago and have made it twice since.
