These days, I feel like a cauliflower rice expert. Richard has been embracing the Keto diet for about two months now. I lasted a little over a week (haha – I can’t live without carbs!) but I’m so impressed with his commitment to this lifestyle change. Dinners can be challenging, but cauliflower rice has become one of our best friends. It’s something he can eat while on Keto and something I actually like. Whether it’s served as a side or as the main course, this buffalo chicken cauliflower rice is a new favorite.

Frozen Cauliflower Rice

Most of the time, I sauté a few vegetables with the cauliflower rice to make a side dish with our grilled meat for a quick weeknight dinner. You can easily make your own cauliflower rice with a head of cauliflower, but I have been buying this frozen organic cauliflower rice from Costco. Packaged in four individual microwaveable bags, it’s easy to pull out of the freezer and cook. The cauliflower rice can be microwaved, but I usually add it frozen to the skillet with other vegetables. It’s the perfect time saving tip for weeknights. And it’s delicious, too!

Buffalo Chicken Cauliflower Rice

Cauliflower rice is delicious as a side dish, but it also works as a main dish as well. Buffalo chicken is one of our favorite meals and I am always trying to come up with new ways to serve the dish in a healthier way. (Remember this fun spin on a game day appetizer?) For this quick weeknight dinner, I sautéed the cauliflower rice in a little olive oil and combined the meat from a Rotisserie chicken and buffalo sauce. I topped the buffalo chicken with chopped green onions and blue cheese for a healthier spin on buffalo chicken wings. This is one dinner that works for Richard’s Keto diet and is still delicious for non-Keto. Check out the easy, weeknight recipe below!

Buffalo Chicken Cauliflower Rice
Instructions
  1. Heat the olive oil in a large skillet over medium heat. Add the frozen (or fresh) cauliflower rice and sauté until just cooked through, about 3-4 minutes. Once the cauliflower rice is cooked, transfer to a medium-sized bowl. In a small bowl, add the chopped chicken and about half of the buffalo sauce. Stir to combine. Transfer the buffalo chicken to the cauliflower rice and add the remaining buffalo sauce to the mixture. Stir to combine completely. Top with the green onions and blue cheese. Serve immediately and enjoy!

  1. Nice post. I will be get an different ideas. It’s creamy, dairy free, and taste like has cheese. Made with chicken, cauliflower rice, lot of spicy dairy free cream sauce. This the best for time dinner. It takes less than 10 minutes to make. To serve, put about one-fourth of the cauliflower rice in a serving bowl, top with a generous spoonful of the buffalo chicken and some sauce, and sprinkle with crumbled blue cheese. Serve hot
