Today I’m back with another take to work lunch idea. I know I say this each time I share one of these recipes, but the struggle is real when it comes to packing a lunch for work. For me, I get sick of the same thing everyday (more power to you if you don’t — my husband could eat the same thing everyday of the week!) and coming up with new and packable lunches is tough! Pepperoni rolls have always been a favorite of mine, so I decided to do a vegetarian spin on the classic roll up lunch.

I’ve been eating pepperoni rolls for as long as I can remember. The combination of pepperoni, mozzarella, sauce and banana peppers (the best part!) will always be a favorite. But, in an effort to make a healthier recipe, I took out the pepperoni and replaced it with sun-dried tomatoes, I swapped the marinara sauce for a basil pesto and I kept the mozzarella and banana peppers. The combination was seriously delicious and pretty filling. I had these a few weeks ago in my lunch and decided to make them again this week. 

As for the filling, you could really add any ingredients you would like: from vegetables, to different sauces to meats, it’s totally customizable. They are also perfect for kid lunches, too! Check out the recipe below.

Vegetable Rolls
Ingredients
  • 2 frozen bread loaves, thawed
  • 1 cup pesto
  • 2 cups sun-dried tomatoes, drained if packed in oil
  • 2 cups banana peppers, drained
  • 4 cups grated Mozzarella, Parmesan, Romano Mix
  • 1 egg, beaten
Instructions
Preheat oven to 375 degrees. Divide the bread loaf into fourths to make a total of 8 roll ups. Roll out the dough on a floured surface. For each roll up, spread about 2 tablespoons pesto, sprinkle ¼ cup sun-dried tomatoes and ¼ cup banana peppers. Top with ½ cup cheese. Roll the dough around the filling and pinch the ends closed. Brush each roll with egg wash and bake for 30 minutes. Once rolls are cool, wrap in foil. Heat when ready to eat. Enjoy!

Finding a dress for a spring or summer shower can be challenging. My mom and I are hosting a shower for my cousin’s fiancee in June so I thought I would get a jump start on looking for a dress. I found this periwinkle lace dress a few weeks ago and thought it was a good price, color, length and silhouette so I decided to order it. I’m so sorry I wasn’t able to share it sooner — I guess a lot of people also loved the qualities of this dress because it sold out super fast. But, because of this dress, I did find a new brand — Soprano. I can’t get over their selection. And the prices are even better — this dress was under $50! I would highly recommend checking out their selection if you are in the market for a dress. I was surprisingly pleased with the quality, too. It definitely doesn’t reflect the price. I have several spring dresses in my closet that have been waiting to make an appearance and now that the weather has {hopefully} turned the corner, I knew exactly which one would be first. This coral midi dress was a staple in my spring and summer wardrobe last year and I was excited to see that it was back again. And now, in more colors and a print!

I can’t even count the times I wore this dress last year — dressed up for work, casual with wedges, with a denim jacket and with a belt just to name a few! It was an easy dress to throw on and I couldn’t get enough of the color. Needless to say I was excited when I noticed this versatile dress was back in stock. You can’t beat the under $70 price tag! Much to my surprise, more colors were available {last year it was just this coral and white} and a floral print. I have to say, I have my eye on THIS blue color. All of these would make for the perfect Easter dress if you are still searching {I know I am!}. As for the sizing, I am wearing a medium here and I feel like I probably could have gone down a size. I’m a pretty true medium and found that this dress was a little big. Although, I like the “flow-ier” silhouette the medium gives, if I end up ordering another color, I will probably size down to a small.

Shades of Blue Under $100

Happy Wednesday! We are back to the color theme for today’s Wednesday Wishes and one that I’m particularly excited about. I would never consider myself to be a “blue person” but each season the color grows on me more and more. For spring, there are so many pretty shades of blue, fun accessories and cute clothes, I couldn’t help but to devote an entire post to this shade. And best part, everything is under $100! You know how much I love a good deal 🙂

One of the main reasons this color is growing on me is because of the variety of shades in the blue family. From denim and chambray to sky blue to royal blue, there are so many fun ways to incorporate this color into your wardrobe. Here are a few of my favorite blue finds that are under $100:


  • Chambray has always had a place in the spring and summer wardrobe. Mix that with two trends {off the shoulder and cropped flares} and you have two seriously cute pieces. This off the shoulder dress not only has bows on the sleeves but also has a tied waist which is perfect for definition. With the side slits and longer length, this dress is a total steal at $88! These cropped chambray pants are a great way to elevate your casual look. Style it with a shirt tucked in to show off the cute bow at the waist and you are set!
  • When it comes to shoes, both of these styles are must-haves for this spring and summer. The ankle lace up sandals are not only a huge trend but look so comfortable with the platform. And how fun is this light blue/lavender color?! Another hot trend that I have also mentioned is the slide sandal. Easy to slip on, these cute blue suede ruffle sandals make for a cute addition to a spring look. And they are under $60!
  • Last but not least, accessories! I always have a difficult time picking a favorite kind of accessory, but it’s a close race between these beaded tassel earrings and this chevron clutch. Although, I have found a new appreciation for baseball hats on the weekends — it makes getting ready for errands super easy!! — and this hat might be too cute to pass up. It’s difficult to see, but yes, it says “gym now wine later”! I thought it was too fun to not include!

Happy Tuesday, friends! I know I had mentioned that I was going to be sticking to healthier recipes here on ABM, but with Easter just around the corner, I couldn’t help but share a cute sweet treat idea that is fun for not only kids, but adults too!

Growing up, Rice Krispie Treats were always a favorite of mine. Not only were they delicious to eat, but also something that I could help out with in the kitchen at a pretty young age. Originally, I was planning to use the plain crispy cereal, but then discovered the fruity version and thought it would be perfect for spring and the approaching Easter holiday. And instead of using just the traditional marshmallows, I also added lemon instant pudding powder to just enhance the fruity flavor. It gave it a super light and fresh taste! You can easily cut them into squares {like I did for the majority of them} or use cookie cutters depending on the holiday or occasion. A simple and fun recipe that will be easy for kids in the kitchen and even fun for adults! My mom and I made these a few weekends ago and had the best time decorating the shapes. It was like Christmas sugar cookies in the spring!

Easter Fruity Rice Krispies Treats
Ingredients
  • 6 cups fruity rice crisps cereal
  • 4 tablespoons butter
  • 10 ounce bag marshmallows
  • 5 tablespoons lemon instant pudding powder
Instructions
Melt the butter and marshmallows in a saucepan over low heat until smooth. Add the pudding powder and stir until completely combined. Place the cereal in a large bowl and pour the marshmallow mixture over the cereal, stiring quickly to make sure all the cereal is coated. Spread the cereal into a rimmed baking sheet. Allow to cool completely. Cut and decorate as desired. Store in an airtight container and enjoy!

Casual pieces like THIS knotted tee are perfect for weekend errands or just lounging around the house. I wore this outfit for our drive home from the beach on Sunday and couldn’t get over how soft and comfortable it was. You may noticed that this knotted tee is actually referred to as a “sweatshirt” but I would definitely classify it as a tee. I ordered it thinking it would be a little thicker {more like the striped sweatshirt that I wore in Monday’s post} and something I could wear during the chilly spring days. Although it is not as warm as I anticipated, it is a great staple that I will probably be able to wear later in the spring given it’s weight. As for length, I was concerned it would be short, but I am actually really happy with where it hits. For reference, I am wearing the medium and I’m 5’8. Available in 6 colors, this tee will be perfect all spring long with jeans or even shorts as the temperatures warm up.

It’s hard to believe Easter is just a little over 2 weeks away. Where is this year going?! Easter Sunday is the epitome of “Sunday best”, so today I’m sharing two bright and cheerful looks for the holiday that can also be worn throughout the season. 



I always feel like Easter is a hard holiday to dress for: the weather could be beautiful or it could be cold and snowing {let’s hope that’s not the case this year!}. Since the weather this time of the year can be up and down, I have one outfit that would be perfect for a colder Sunday and one for warmer weather. Since Easter is a little later this year, I’m hoping that we all can opt for a warmer weather look!
  • We all know my love for pink runs deep and the first outfit has so many pretty shades in one look. For me, it’s hard to pick a favorite piece when it comes to this outfit, but it would be difficult to not rank THESE bow sandals close to the top of the list. Anything with a bow and I’m sold! 
  • Speaking of shoes, I do love THESE lace-up neutral sandals in the second outfit. This is a great neutral sandal that can be worn all spring and summer {and even into the first part of fall} and it’s perfectly on-trend with the lace-up style. 
  • Another trend for spring that I mentioned a few weeks ago is bold stripes. Isn’t THIS dress fun? I love that there are so many colors in the dress and that’s easy to dress more conservatively with neutral accessories or with hot pink accessories if you are living on the edge 🙂

Healthy Snack: Peanut Butter Energy Bites

With my serious weakness for peanut butter, I can’t believe it’s taken me this long to share this quick snack idea with you! It was a staple in our house when I was growing up — my mom made them for just about every tennis match through college and they were always a fan favorite.

When we were on the no carb diet a few weeks ago, coming up with “take to work” snacks was a real challenge. Although I am back to eating carbs {thank goodness!} my husband is still doing pretty well with the no carb eating — I have been making his breakfast and lunches for the week ahead of time and no carb dinners for both of us. Anyways, back to these delicious peanut butter bites. Whether you are on a diet or not, I think everyone can appreciate a recipe for a snack, especially when you hit a wall around 3pm! With only a few healthy ingredients {there are old fashioned oats in these, just an FYI for the no carb dieters!}, they are quick and easy to make over the weekend and you can enjoy them all work week long. That is, if they make it through the week. I have a hard time limiting myself to just one. 

I finished the energy bites off with a little dusting of powdered sugar for the pictures. If you are looking for the healthier version of these, I would just skip the powdered sugar dusting 🙂 Check out the recipe below — you won’t be able to just eat one!

Peanut Butter Energy Bites
Ingredients
  • 1/2 cup creamy peanut butter
  • 1/2 cup honey
  • 1 cup dry milk
  • 1 cup old fashioned oats
  • 1 cup bran flakes, crushed
  • 2 TBS powdered sugar
Instructions
Mix together the peanut butter, honey, dry milk and old fashioned oats. Roll into balls. Mix the crushed bran flakes and powdered sugar together in a shallow bowl. Roll the peanut butter balls in the mixture. Dust with additional powdered sugar, if desired. Store in airtight container and enjoy!

When I saw THIS sweatshirt online, I thought it would be perfect for our trip to the beach for Ella’s birthday this past weekend. It had that nautical feel and was something comfortable for the car ride. It was a little chilly {and super windy} on Friday and this sweatshirt was surprisingly warm as well. And the comfort level was off the charts. Available in solid colors as well {I have my eye on the red!} the sweatshirt is a little on the boxier side — I’m wear a medium for length and still had to wear a camisole so it wouldn’t be too short. Although, I don’t mind that it’s a little oversized: it’s easy to throw on, making it the perfect weekend/errand running top. 

I also recently purchased THESE jeans with the raw hem. You may remember from THIS post that this was one spring trend I was looking forward to purchasing. Priced under $100, these jeans were super comfy — I especially loved the higher rise. I went with my regular size and they fit well — after a few hours of wearing them, they did stretch out a bit, but nothing that indicated I needed a smaller side. Anyways, I would say they run true to size! 

How was your weekend? We had such a fun time with Ella at the beach. Most years when we take her for her birthday, it’s cold and sometimes it even snows! The weather was gorgeous and she had SO much fun. She even let the ocean water touch her paws — in the past, she was strictly a sand girl 🙂 She also found a new hatred for seagulls. She was chasing them all weekend! I can’t believe Miss Ella is five years old today! She is the cutest and craziest pup I know and we love her so much! Happy Birthday, Ella!
