It’s no secret that sheet pan dinners are some of my favorite kinds of dinners. I’ve shared quite a few here on the blog, it’s one of my favorite recipes to develop! However, it is a toss up as to what I like most about these dinners. I love the flavor of roasted vegetables but I also love how quick and easy the preparation and clean up is for these types of meals! With St. Patrick’s Day next week, I wanted to share an Irish sheet pan dinner that is the perfect way to celebrate.
St. Patrick’s Day Sheet Pan Dinner
I always feel guilty on St. Patrick’s Day because I am not a huge fan of Irish food. I am nearly 40% Irish, have a very Irish maiden name and married name and I don’t get too enthusiastic about the food. I typically share a sweet for this holiday (or shamrock chips and Reuben dip like I did last year!) because it’s an easy way to celebrate the holiday without eating the traditional food. But this year, I was determined to make an Irish dinner dish. And since I haven’t shared a sheet pan recipe in a few weeks, I thought this was the perfect way to give an Irish-inspired dish a try.
As I mentioned, I love the way vegetables taste roasted in the oven so this seemed like the logical way to enjoy this Irish dish. Since I wanted to stay true to the Irish flavors, I used Irish bangers, baby potatoes, cabbage, fennel and caraway seeds. Richard, who is quite Irish himself, was around for the cooking of this food post and completely devoured the meal! Although this is quite the claim, he said this was the best sheet pan recipe I’ve made yet! I got one little bite and absolutely loved the flavor. It definitely tasted Irish, but not as bland as I typically think of Irish food. Richard ate the rest of the dish, so I didn’t get much. But since it was such a hit with him, I’m thinking I will be making this again. And not just on St. Patrick’s Day!

As a side note, if you can’t find Irish bangers, you can easily use regular sausage. However, if you are making this in the next week, I have seen Irish bangers everywhere! From the grocery store to Costco, they seemed to be featured heavily in the Irish/St. Patrick’s Day section at the stores.

- 1.5 lbs. baby potatoes, halved
- 1/2 head cabbage, sliced into chunks
- 1 bulb fennel, thinly sliced
- 14 ounces Irish bangers or other sausage
- 2 tablespoons olive oil
- 2 teaspoons caraway seeds (more or less depending on how much you like them!)
Ingredients

- Preheat the oven to 400 degrees. In a large bowl, combine the baby potatoes, cabbage, fennel and sausage. Drizzle the olive oil over the mixture and add the caraway seeds. Toss to combine completely. Lightly spray a rimmed baking sheet with cooking spray and transfer the mixture to the baking sheet, making sure everything is flat. Cook for 20 minutes, stir and then cook for an additional 20 minutes. Serve by itself or with a side of rice. Enjoy!

I love a good traditional St. Patrick’s Dinner. This is actually perfect because I was planning on doing something different with the Corned beef and making the cabbage separate. I am pinning this to try. thanks for sharing.

Yum! We don’t really try to eat Irish food on St Patrick’s day but it sounds like an easy way to celebrate that doesn’t involve drinking an enormous amount of green beer!
Give me all the St Patrick’s Day food! Omg this looks soooo yummy and so easy! Just needs a side of Guinness!

I recently fried up some cabbage with some avocado oil with salt and pepper and it was SO delicious. Adding potatoes is such a good idea.
