This is one of my very favorite side dishes ever! Not only is it a cool, fresh and delicious dish, it also compliments so many grilled meals perfectly. The combination of watermelon, lime juice, cucumbers, cheese and pistachios are some of summer’s best flavors. Serve the salad in the watermelon for a cute and creative presentation! Cauliflower “Potato” Salad

While the holidays are a great opportunity to splurge, if you are trying to stick to your healthy eating but still enjoy some of summer’s best side dishes, this Cauliflower “Potato” Salad is the recipe for you. Potato salad is the perfect summer BBQ side but it isn’t always the healthiest. I replaced the potatoes with cauliflower in my favorite potato salad recipe to create a healthy spin on this BBQ classic. See the recipe here.
Zoodles with Avocado Sauce & Roasted Tomatoes
As with the Cauliflower Potato Salad I mentioned above, zoodles are a great way to incorporate healthier BBQ side dishes into your lineup. While I’ve shared a few variations to the zoodle recipe, this recipe with the avocado sauce and roasted tomatoes screams summer. This particular recipe could work as a side dish or even a full meal. A caprese salad is my go-to, favorite, “no matter what the season” appetizer. I will eat tomatoes all year round, but you can’t pass up on the amazing flavor of tomatoes in the summertime. And speaking of flavors, if you are looking to kick your caprese salad up a notch, try grilling the tomatoes. Yes, grilled tomatoes add the most amazing flavor to an already delicious tomato.
