Happy Tuesday! Continuing the Fourth of July themed posts today with an easy, make-ahead dessert that’s perfectly patriotic. I’ve wanted to try my hand at icebox cakes for sometime now and thought that the mixture of berries and cream would make for a delicious summer treat. And with the added flag design out of berries on the top, it will make for a delicious way to end your Fourth of July celebrations next week.

I can’t even tell you how many times I have seen recipes for “icebox cake” over the years. I have always been intrigued by them. Before reading the ingredients and instructions, I had no idea what constituted an “icebox” cake but knew it was something I wanted to try because they always looked delicious. When I discovered that this was a make-ahead, easy dessert, it just made the idea of making an icebox cake about 20 times better!

A Patriotic Dessert

I always gravitate to berry desserts for the Fourth {you can see last year’s berry dessert HERE} because they make for refreshing desserts on warm summer days. And, well, the colors are perfect too! I made this cake and let it sit overnight in the refrigerator — truly a dream for any hostess who is having company over for dinner. I wasn’t planning to eat the piece I photographed below, but ended up eating that piece and ANOTHER in one sitting. Oops! This is definitely one light and refreshing dessert for the summertime heat. American Flag Icebox Cake
Ingredients
  • 1/3 cup powdered sugar
  • 2 cups heavy cream
  • 1 teaspoon vanilla
  • 8 ounces cream cheese, softened
  • 18 graham crackers
  • 3 cups mixed berries (I used raspberries & blueberries}
Instructions
Beat the powdered sugar, heavy cream and vanilla in a mixing bowl until stiff peaks form; set aside about 1/2 cup of the whipped cream. In a separate mixing bowl, beat the cream cheese until smooth. Fold in the remaining whipped cream. In a 9×9 glass baking dish, spread a thin layer of the cream cheese and whipped cream mixture on the bottom. Place a layer of graham crackers on top then half of the cream cheese and whipped cream mixture. Place about 1 cup of the berries into the mixture and repeat the previous steps. Top with the final layer of graham crackers then spread the 1/2 cup of reserved whipped cream on top. Top with berries in a flag pattern, if desired. Refrigerate overnight before enjoying.

  1. Wow, this looks absolutely delicious, girlie, and PERFECT for a 4th celebration! I'd love to make something like this to bring to a BBQ; I don't know if it will be this year, since that's my due date, but I've been hearing that I can either have her any day now (which I hope is the case b/c I'm so tired of being pregnant right now) or well after the day, so we shall see! Thanks for sharing and I hope you're having a great day so far!
