Happy Wednesday! I hope you all had a wonderful Fourth of July weekend and ready for this short week ahead. You have to love holidays that fall in the middle of the week! Mediterranean Cauliflower Rice

First up is this Mediterranean Cauliflower Rice. For those who have been following along for awhile now, you probably know about my obsession with cauliflower {also, see below}. This is one recipe that I shared last spring and it still makes an appearance in my lunches. Last year when I came up with this recipe, I didn’t know of buying cauliflower rice in the store, so I did it myself. Now, finding cauliflower already “riced” is much easier — I’ve seen it at Wegmans and Trader Joes!
Cauliflower Potato Salad

Speaking of cauliflower…I wasn’t kidding about my obsession! I swapped the potatoes in your traditional potato salad for cauliflower to make a BBQ staple a little more healthy. The best part, I didn’t even miss the potatoes in this healthy summer side dish.
Quinoa Caprese Salad

Caprese salad is one of my favorite foods. There is just something about that tomato and mozzarella combination that tastes so good, especially in the summertime. In this healthy side dish {or in the case of last year’s post, a make ahead lunch idea} I traded the pasta for quinoa for a healthy take on the delicious combination.
Zoodle Mac & Cheese

Last, but not least, a healthy recipe that ranks near the top of my favorite recipes ever. I’m a sucker for a good mac and cheese and this zoodle version is not only healthier than the traditional mac and cheese, but just as delicious and super quick.
