Happy Tuesday, friends! With the Super Bowl this weekend, I wanted to share a quick and healthy appetizer idea for the big game. Buffalo Cauliflower is a great way to get the flavor of wings but without all the calories. And this recipe features baked cauliflower rather than fried so you won’t have to worry about over indulging.
Healthy and quick weeknight dinners are always on my mind, but especially at the start of fall. As I mentioned with last week’s Sheet Pan Chicken Fajitas, I think it’s because I’m preparing for dinner without a grill in the colder months which forces me to come up with quick dinners indoors. This Cauliflower Fettuccine Alfredo is a spin on the traditional Fettuccine Alfredo but with a fraction of the calories. A relatively guilt-free dinner, you will find yourself reaching for seconds without feeling bad about it!
Happy Wednesday! I hope you all had a wonderful Fourth of July weekend and ready for this short week ahead. You have to love holidays that fall in the middle of the week! Today I wanted to recap a few of my favorite and most popular healthy summer recipes. Healthy food doesn’t have to be complicated to make — I love that all these recipes are quick and simple.
