Happy Monday! I hope you all had a wonderful weekend! Last week, Wednesday Wishes {post HERE} was all about creating a casual weekend look. And this past weekend, I put it into action! Although, I would have much rather worn this cute denim skirt, unfortunately Saturday started out rainy and turned out to be a pretty cool day. Utility jacket with white jeans it was! So excuse the white jeans again 🙂

With pretty basic pieces, I love this effortless look and how well the colors work together. Tan and green are always one of my favorite combinations, but with the all-white background, it really pops! And when it comes time to pick tan shoes out of my closet, I always reach for these mules. I bought them last year, but I have seen a few similar styles this season. I linked a super similar pair above and best news — it’s on sale! I highly recommend adding a pair of mules to your closet. They are comfortable, easy to throw on and can go with just about anything in your closet. Sounds like a spring and summer staple, right?!

What was your favorite look from the weekend? Hopefully next weekend will consist of more summer-like pieces. I’m ready for the warmer temperatures!

Thanks for dropping by and see you tomorrow for an all new, simple and quick weeknight dinner! You will not want to miss this!

Happy Friday Eve! It’s so hard to believe this is the last full weekend in April! Aren’t the months just flying by?! Well I’ve talked and talked about two of my favorite trends for spring {off the shoulder tops and tassels} and today, I recreated my outfit inspiration from a few weeks ago {see post HERE}! Off the shoulder tops and tassels just go together, right?!

I’ve been searching for an off the shoulder top for a few months now and I’m so happy the weather is finally warming up to wear it! I love everything about this blouse: the bow detail on the sleeve, the darker chambray color and the slits up the side. Such a cute, comfortable and cool blouse that can be worn all spring and summer long! It’s also available in a lighter blue, white and grey — so with that under $20 price tag, you will need one of each! A note on sizing: I sized up for length because, as you can see, the slits on the side are pretty high. In this particular outfit, they come up to just about the waist on my jeans {these jeans are not low-rise}. The sleeves and body of the blouse are a little large on me, but I wouldn’t have wanted the slit any higher with my regular size, so I’m glad I sized up. But that’s just me 🙂

As for these FABULOUS pink tassel earrings — I’m so obsessed with them! I have been searching for pink tassel earrings since about January, but didn’t see any that I liked: the color was always off or the price was too high. I saw THESE stunners last week and knew I had to have them. For being more of a statement earring, they are pretty light in weight. I wore them all day Sunday at the winery and didn’t have any problems 🙂 And, they are of course the perfect color of pink and will go with so many things in my closet!

One last item of note: you can’t talk about pink without mentioning this hot pink lipstick! It’s one of my favorite spring/summer shades and it’s a SUPER bright pink. It pairs perfectly with these tassel earrings and Lilly Pulitzer, of course 😉

Thanks so much for dropping by and I hope you all have a wonderful weekend!

Happy Wednesday! Hard to believe we are already halfway through the week! Today’s Wednesday Wishes is devoted to casual weekend wear. I don’t know about you, but I feel like I have two sets of clothes in my closet: my 9-5 work clothes and “other”. The majority of my clothes would most definitely be classified as work clothes, since I spend the majority of my time there! So, when I’m looking for weekend clothes, I like to find reasonably priced items and, if I’m lucky, they can double as work clothes too! Everything in today’s collage is under $100 — except the platform sandals. I couldn’t resist sharing them with you — I love the lower platform and they are just a little over the $100 threshold 🙂 I did find THESE and they are only $75 with a little higher platform!

For this particular look, the denim skirt and sandals probably would only work on casual Friday, but everything else could easily be mixed and matched to make it workday suitable. Speaking of this denim skirt, how many people had a skirt similar to this a decade ago?? Is anyone else kicking themselves for not saving it like me?! haha In this case, it’s definitely safe to say what’s old becomes new again!

As for accessories, these sunglasses and this watch are quite the deal! I love the thin strap on the watch, it makes it perfect for stacking! Lastly, I have mentioned this weekly nail polish before {it’s my very favorite!} and this color is the latest on my wish list — it looks like such a pretty, soft pink that would be great all summer long, and even suitable for work!

What are your go-to weekend wear pieces? Hope you have a wonderful Wednesday!

healthy snack: almond butter cheerio bites

almond-butter-cheerio-bites

I’m sure by now you have caught on to my obsession with peanut butter {exhibit A, exhibit B}. But, as much as I love peanut butter, it can be pretty high in calories. Over the past year or so, I have really been loving almond butter, too. Although, I do not love the price! A few months ago, I decided I was going to try to make almond butter myself. I mean, all you need are almonds and a food processor! Much to my surprise {I was pretty worried for the first two minutes watching the almonds and how they were NOT transforming into a creamy texture — just give it time, it eventually will!} it was easy, delicious and super cost effective!

One of my favorite snacks growing up were peanut butter Cheerio bars. My mom made them for most tennis matches throughout high school and college — they were definitely a crowd favorite! A few weeks ago, I was thinking about these delicious snacks and thought I would recreate this famous recipe with almond butter instead of peanut butter. To make it a little healthier, I also used honey as the sweetener {instead of sugar} and added the banana chips for an added crunch. I have been snacking on these yummy treats for breakfast and/or {mostly just and} lunch for the last few weeks, and let me tell you, they are so addicting! So if you are looking for an anytime of the day, healthy snack, try this easy recipe — the hardest part is making the almond butter! 🙂

Almond Butter Cheerio Bites

{what you will need}

6 cups Cheerios
1 cup Karo
1/2 – 3/4 cup honey
2 8 ounce bag almonds {makes about 1 1/2 cup almond butter}
1/2 cup banana chips, crushed {more if desired}

{directions}
Begin by making the almond butter: place almonds in a food processor and allow to run for 8-10 minutes or until desired consistency is reached {you may need to stop the food processor to push the almonds down towards the blade every so often}. Once the almond butter is a smooth and creamy texture, measure out 1 1/2 cup {mine made exactly this amount}. Melt the Karo, honey and almond butter together in a small pan over low heat until completely combined. Meanwhile, place the Cheerios in a large bowl and add the crushed banana chips; combine completely. When the almond butter mixture is combined and melted, pour over the Cheerio mixture and mix together with a rubber spatula, working quickly because this is a pretty sticky mixture! Line a baking sheet with wax paper. Form the Cheerio bites into 1 tablespoon clusters and place on the wax paper. You can also place the Cheerio mixture into a greased pan and cut into bars/squares {as pictured at the top}. Place in the freezer for 30 minutes to set. Serve at room temperature and store in an air tight container for up to a week.

Happy Monday, friends! I hope you all had a fabulous weekend! We had a busy, work-filled couple of days. Saturday was completely devoted to yard work, and trips to Home Depot. Although I am so happy all the yard work is done until next spring, I was beat {and super sore haha!} by the time yesterday morning rolled around! Yesterday, after shooting some outfits, we went to a pet-friendly winery my husband recently discovered {Stone Tower Winery, if you are in the Virginia area — highly recommend!!}  This was our first weekend with nice weather and there were so many people there enjoying the gorgeous weather! Overall, the winery was great and Ella seemed to have a fun time…she was completely exhausted last night! Here are a few pictures from Snapchat {rach.mccarthy7} 🙂

Just a quick post to share with you two of my favorite spring essentials: trench coats and Hunter boots. You may remember this trench from a few weeks ago {post HERE}. It’s the perfect layering piece for spring and works well with or without rain 🙂 Speaking of layering pieces, I bought this dress and few years ago {I always love a good polka dot!} and paired it with this thin sweater for a sweater/skirt look. Although this particular dress is a few years old, I did link a similar style I found above, and it’s currently on sale!

I hope you all have a wonderful start to the week and thanks for dropping by! See you tomorrow for an all new recipe post!

Happy Friday Eve, friends! Another week almost in the books! It should be no surprise by now that I love anything and everything monogrammed. Although my monogram collection is quite extensive, there was one thing missing that I had been looking for…a large, monogrammed necklace! This monogram necklace is the perfect preppy statement piece. I went with the 24K gold plated necklace in the XXL size — I wanted the monogram to be large enough to see, which is sometimes difficult with the smaller script font. Onecklace has a fabulous selection of personalized jewelry — everything from earrings to bracelets to rings to necklaces! And exciting news! Onecklace is offering 10% off your order with the code blonde10

One quick note about this look — I bought this Lush tunic back in the fall in a few colors {I am so obsessed with it!} and now it’s on sale! The white is pretty sheer {it comes in a few other colors, too}, so I wore a camisole underneath. The mixture of white with tan/neutral accessories is so clean and crisp, I just love it for spring!

Thanks so much for dropping by and have a wonderful weekend! After being gone the past few weekends, I am looking forward to a weekend at home, with lots of yard work haha! See you back here on Monday!

P.S. More exciting news! I am featured in today’s Fashion Files wearing the blush and citron combination from last week! Be sure to head over to check it out! So excited to be featured in the link up this week! xo

what’s in my makeup bag

makeup-bag-essentials

I’m switching things up a little for today’s Wednesday Wishes to share with you what is currently in my makeup bag. Makeup and beauty related posts seem to be popular, so I will be sharing more of these kind of posts as we head into summer. Please let me know if you have any questions! All the products that I mention in the post are also linked in the tool at the bottom of the post 🙂

best-beauty-products
You may remember from Favorite Beauty Finds of 2015 post {HERE} my love for my Clarisonic Brush with the Cashmere Cleanse Brush and Gentle Hydro Cleanser. I have super dry and sensitive skin and find this to be the best way to clean my face, morning and night. I was afraid to use it twice a day given my sensitive skin, but I find that when I only use it once a day, my skin doesn’t look nearly as clear and radiant. I’ve tried a few of the other Clarisonic brushes {THIS one most recently} but I have had the most luck with THIS brush.

You may also remember this Beautycounter Face Oil from the beauty finds post. I started using THIS face oil almost a year ago and haven’t stopped since! It takes the place of a traditional moisturizer and I honestly think it does a much better job of keeping my skin hydrated. I apply this right after washing my face in the morning, usually two drops in the winter months and one drop the rest of the year.

The last step in creating my base is this Too Face Hangover Replenishing Primer. I had been searching for a primer for quite sometime, and wasn’t really thrilled with any of the samples I had tried. Enter this coconut water, probiotic-based primer. With more of a creamy texture, instead of the gel-like primers I was use to, I was skeptical. But, I have been using this since February and I haven’t had one issue to report! I love the way this primer hydrates and smoothes your skin to prepare for your foundation!

best-foundation-products
Next up is foundation. Last May, I switch from THIS Bobbi Brown foundation to the Beautycounter foundation. {I reviewed Beautycounter and their safe skin care products last summer, read the post HERE} Currently, I am using the Tint Skin Foundation in Porcelain {I use this foundation in the winter months because it’s a little heavier, but still lightweight}. I use THIS retractable complexion brush to apply the Tint Skin Foundation. In the summer months, I like to wear the Dew Skin Tinted Moisturizer in No. 1 because it’s lighter and also is SPF 20. {**Side note: usually when I use a foundation that has “SPF” it causes my skin to have a bad reaction. I have never had a reaction to the Dew Skin, which is basically a miracle!} I am almost out of the Tint Skin and will be ordering more of the Dew Skin in the next week! While we are on the Beautycounter subject, I am also a huge fan of the body lotion and hand lotion — they both have an amazing citrus smell!

Next up is concealer. I recently switch from THIS concealer {I’ve used it since high school!} to the NARS Radiant Creamy Concealer in Chantilly. I really like the ease of application {it’s like lipgloss!} and it’s super blendable and buildable. I use it under my eyes and over any blemishes.

To apply the concealer, I use my latest love, the beautyblender. Honestly, I was pretty hesitant to purchase this makeup sponge. Priced at $20, I figured I could find a similar one for a cheaper price. I did buy one at Target that was under $5 {thinking a makeup sponge is a makeup sponge, right?} and wasn’t thrilled with it. I broke down and purchased this hot pink beautyblender {available in other colors, too!} and I’m so mad at myself for wasting the money at Target! It blends the concealer so well and last the entire day. To use the blender, I wet the sponge and squeeze out any excess liquid. I apply the concealer directly onto my face {you can apply the concealer or foundation directly to the sponge, too} and “bounce” the blender across my face to create a flawless finish. I use THIS to clean my beautyblender, which can also be used for your makeup brushes. And it’s great for travel 🙂

Lastly, I set my makeup with this Bobbi Brown Sheer Pressed Powder in pale yellow all over my face. I haven’t really got into the contouring {I feel like it would look like I have streaks of makeup all over my face!} so I use the NARS Blush and Bronzer Duo instead. The blush can be bought separately {HERE, color is orgasm} and is a great color for most skin tones. I use THIS brush to set the pressed powder and THIS brush for applying the blush.

best-eyebrow-products
Since my hair and eyebrows are pretty light, I swear by this eyebrow powder in the dark blonde shade {it’s under $7!}. I use about three coats and apply it directly to my eyebrows after finishing the above foundation steps. I love that it only sticks to your eyebrows and not only does it fill the eyebrows in nicely, it really makes your eyebrows pop, especially if you have lighter hair like me. Also, it lasts FOREVER! I use THIS brush to apply the powder and THIS comb/brush tool {under $3}.

best-eye-makeup-products
Finally, the last step! I will go through this section quickly since there are a lot of products and tools mentioned. I’ve also included each brush I use for application. This is my typical, everyday/workday eye makeup, that I may slightly deviate from depending on the day. It’s a super basic combination and easy to apply:

I start off with THIS long-wear cream shadow base in the BONE color and I cover my entire eyelid, all the way up to my brow bone. This is like a foundation for your eyeshadow and keeps your eyeshadow on all day! I sometimes use it alone if I’m just out running errands. I highly recommend it!

 As an all-over color for my eyelid, I use THIS gold MAC eyeshadow {RETROSPECK}. It’s not super shimmery and is a great basic color. I use THIS brush to apply the all-over color on my eyelid

 I use THIS grey shade {HEATHER} for the crease with THIS brush.

I use THIS eyeliner on the top and bottom lids in the espresso ink color and apply with THIS brush.

I highlight my eyebrow with THIS Bobbi Brown eyeshadow in the BONE color and use THIS brush {same as the brush for all-over color on eyelid}.

I finish my eyes with THIS no smudge, long-wear, waterproof mascara.

Whew! Sorry for the long post! There are so many details to cover when it comes to makeup! Let me know if you have any questions and thanks so much for stopping by! Have a wonderful Wednesday!

make-ahead breakfast burritos

make-ahead-breakfast-burritos

Last week, I shared a make-ahead lunch recipe for the work week {post HERE if you missed it} and this week, it’s all about a make-ahead breakfast idea! I don’t know about you, but my mornings can be pretty crazy. With lots to do in the morning before facing a long commute to work, anything that can simplify my morning routine is welcomed.

These, prepare in advance, keep in the freezer breakfast burritos are the perfect “grab and go” breakfast that you can even take and eat on the road. And the ingredients are totally up to you! I used breakfast potatoes, cheese and egg whites in each of the burritos and added turkey bacon for my husband for half of the burritos. Wrap the burritos in parchment paper and store in a freezer bag for up to 3 months, and when you are ready to eat one, just microwave it for 3 minutes and breakfast is done!

Breakfast Burritos

{what you will need}
1 – 16 ounce container egg whites {I used Egg Beaters}
1 – 28 ounce bag frozen hash brown potatoes {I used the potatoes mixed with peppers & onions}
1 – 16 ounce bag shredded Mexican cheese
6 burrito size tortillas {I used whole wheat}
3-4 slices turkey bacon, more if desired
2 tablespoons olive oil
1 tablespoon butter
Cooking spray
Salt and pepper, to taste
2 freezer bags
Parchment paper

{directions}
Spray nonstick skillet with cooking spray and heat on medium-high heat. Add the egg whites and season with salt and pepper. Allow to cook until fluffy and just set, about 3-4 minutes. Remove from the heat. {I used an electric skillet to cook the hashbrowns, but if you don’t have an electric skillet, you can use a regular skillet, just be sure to remove the eggs and set them aside first.} Add the olive oil and butter to the electric skillet and set heat to 350 degrees. Add the hashbrowns and stir occasionally, season with salt and pepper. Cook for about 20 minutes, until the hashbrowns begin to brown. To assemble burritos: Place a tortilla onto your work surface and spoon the hashbrowns, eggs, turkey bacon {if using} and cheese into the center of the tortilla in a rectangle shape. Fold the bottom of the tortilla tightly over the filling and then fold in the left and right edges of the tortilla. Roll the burrito up to the top edge until completely sealed. Place the burrito in parchment paper and roll until tightly wrapped. Place parchment paper-wrapped burritos in a freezer bag, waiting until the burritos are completely cooled to place in the freezer. Store in the freezer for up to 3 months. To heat burrito: Remove burrito from the parchment paper and wrap in a damp paper towel. Microwave until hot, about 3 minutes, before serving.

Ella’s Birthday at the Beach

morkie-at-the-beach
Happy Monday, friends! I hope you all had a wonderful weekend! You may remember a few weeks ago when we celebrated Ella’s birthday, I mentioned we had a trip to the beach planned, and this was the weekend! Ella is definitely a beach girl. She was only a couple months old when we discovered her love for the sand {not the ocean, she won’t go near it!} Although, one of her favorite activities at the beach happens to be eating the sand, which never ends well, we try to keep her focused on playing in the sand, instead of eating it.

As I mentioned, we have been taking Ella to the Rehoboth Beach area of the Delaware coast for a few years now. Last year, Ella’s birthday fell on a Friday so we made a weekend out of it at the beach. The only problem is that her birthday is the end of March and it actually SNOWED that day. We said that this year, we would push it back a few weekends, because it could never snow in April. Well, it didn’t snow, but it was a pretty cold rain Saturday. We did have a few hours of sunlight on Friday afternoon when we arrived and Ella took full advantage. And not even the wind could stop her {see picture below} 🙂

dogs-at-rehoboth-beach
morkie-at-beach
It’s very rare for us to ever leave Ella to go away for a long weekend. Typically she likes to come with us! Ella is super set in her routine, so it has been difficult staying in a hotel with her in the past. But, this past weekend was a success! Even the constantly slamming of doors throughout the hotel didn’t bother her. We can blame that on exhaustion from the beach I think!

I wanted to share a few of our favorites on the Delaware coast — everything from the dog friendly hotel to the best food to a newly discovered juice bar!

dewey-beach-photography

hyatt-place-dewey-beach

Since we first starting coming for Ella’s birthday weekend, we have been staying at the pet friendly Hyatt Place Dewey Beach. It is a pretty new hotel and super clean — something that is hard to find when it comes to beach hotels. And, it’s only a block from the beach so it doesn’t get much better when it comes to location.
dogfish-head-rehoboth-beach
Dogfish Head is always a must when we head to Delaware. Although Dogfish Head is more known as a microbrewery based in Milton, Delaware, this brewpub based in Rehoboth Beach has been around for over 20 years! But, what I love most about Dogfish Head is their food! They do have a patio that is connected to the restaurant where we usually eat when Ella is with us, but it is unfortunately under construction, so we just took our lunch on Friday to go {which honestly was fine because the wind was really starting to pick up by Friday afternoon!}. I recommend the crab cakes and the fried pickle appetizer 😉

greenman-juice-bar-rehoboth-beach

smoothie-rehoboth-beach
It was rainy, cold and windy for most of the day on Saturday, but in between the rain showers we hit the beach with Ella again and found the most amazing juice bar and healthy eating restaurant in Rehoboth, GreenMan Juice Bar & Bistro. If you follow me on Snapchat {rach.mccarthy7} you may have caught my obsession with this “Healthy Elvis Smoothie”. And obsession is probably an understatement. The ingredients are listed as bananas, raspberries and organic peanut butter, which seem to be pretty healthy. Right?! In all honestly, it tasted like an unhealthy peanut butter milkshake! We actually had to stop one more time yesterday before leaving because I had to have it one more time!
lupo-italian-restaurant-rehoboth-beach
Saturday evening, we got take out {we don’t like to leave Ella in the room!} at our favorite Italian restaurant at the beach, Lupo Italian Kitchen. For an appetizer, my husband and I split the meatball flatbread — you know our love for meatball pizza — with whipped ricotta. I loved that they added the ricotta instead of the usual mozzarella cheese. I will definitely have to try the ricotta cheese next time I make meatball pizza! For dinner, I went with the Eggplant Parmesan and my husband decided on the Chicken Parmesan. The chicken was served with pasta and the eggplant was served with sautéed broccoli rabe…it was such a delicious twist on the usual eggplant and pasta combination!
dolles-rehoboth-beach

And, of course we couldn’t leave the beach without picking up a container of Dolles caramel popcorn! It’s one of my favorite sweet treats and a must if you are visiting the Delaware or Maryland coast.

rehoboth-beach-things-to-do
Overall, it was a great weekend celebrating Ella’s fourth birthday at the beach! Looking forward to our next trip back to the beach with our little beach girl!

P.S. Here is a short video of Ella from the weekend. We like to call these her “figure eights” 😉

Wow! Thursday already?! These weeks are just flying by! Today’s post is brought to you by some serious wind haha! In all seriousness, when we shot this look Sunday morning after church, the wind was absolutely crazy!!! It may look like a gentle breeze from these pictures, but let me tell you, we were working with some insane conditions. It’s a miracle we had anything usable, but they did turn out pretty good, all facts considered 😉 **And thank you to my fabulous mom for shooting both outfit posts this week! My husband, who usually takes my pictures, was out of town. I’m so thankful for both of them!!**

We all know my love for blush {exhibit A, exhibit B} and now that we are have reached April, {technically, I can’t say “now that the temperatures have warmed up” because I wore my PUFFY WINTER COAT to work yesterday!! Seriously??} I’m starting to incorporate brighter colors into my wardrobe. I love the mix of this super bright citron with the soft blush — it’s a fabulous juxtaposition and it matches these fun floral statement earrings perfectly!

I may have mentioned this reversible tote that I bought last year, but I haven’t actually worn it on the blog. Which is super funny because I use it all the time in “real life”. Usually, it serves as my camera/computer/chargers bag, but it’s so versatile that you can easily carry it as a handbag too. {It also comes with a wristlet attached to the inside of the bag, perfect for your phone, money, etc…} This particular blush tote is reversible to a beige, but it is also available in a few other colors too {you can shop them HERE}.

Lastly, I had to share this new lipstick with you that I picked up last week at Sephora. As much as I love my go-to lipstick/lipgloss combo that I mentioned last week, the lipstick is running low and I was looking for a replacement for summer. After trying a few neutral/beige colors, I decided on this color from YSL. Although it is a little more expensive than other lipsticks, I really love the color and it’s super glossy look and feel.

I hope you all have a wonderful weekend! We are heading to the beach tomorrow to celebrate Miss Ella’s birthday. As of now, the forecast is looking pretty cold, so we are hoping that will change! Follow along on Instagram {rach.mccarthy} and Snapchat {rach.mccarthy7} for more of Ella’s trip. Just wait, she is one crazy pup at the beach 🙂
