Taking a break from the grilled recipes today to share a new favorite in our house. I have shared my love for sheet pan dinners (most recently here) a few times here on the blog. It’s my go-to for weeknight dinners. We recently discovered this beef sirloin for fajitas at Wegmans and fell in love. The first few times I made it, I sauteed the beef and pepper mixture in a skillet. However, I realized it would be just as good in the oven for the an easy, weeknight sheet pan dinner!

Weeknight Sheet Pan Beef Fajitas

The first time I saw these beef fajitas at Wegmans, they came mixed with the peppers and onions already sliced. I loved the idea of this simple meal! However, it was pretty pricey! Why do pre-cut fruit and vegetables have such a high markup?! I discovered that Wegmans was selling the beef by itself (see it here) in the meat section and the price was much better. I picked up a red onion and various colors of bell peppers and we were set!

Since I know everyone does not have a Wegmans grocery store close by, I listed the two ingredients that make this beef sirloin perfect for fajitas: guajillo chili paste and dried guajillo adobo seasoning. These two ingredients are listed on the packaging of the beef and truly make these fajitas delicious. You could easily find regular sirloin at your grocery store and marinade the meat in these flavors to achieve a similar taste.

While I served this dish with tortillas and my favorite fajita toppings (sour cream and guacamole!), you could also serve the beef and pepper mixture over a salad or even a rice or quinoa bowl. These beef fajitas are a new favorite in our house. We are having them again Thursday night for dinner! And I love how quickly they bake in the oven. You can’t beat a sheet pan dinner on a weekday! Weeknight Sheet Pan Beef Fajitas
Instructions
  1. Preheat the oven to 400 degrees. In a large bowl, toss the beef, bell peppers, red onion and olive oil until completely combined. Transfer fajita mixture to a rimmed baking sheet. Cook for 10 minutes, toss the mixture, and cook for another 8-10 minutes, or until it reaches the desired temperature. Serve with flour or corn tortillas and desired toppings.
