I have always found breakfast foods to be challenging. Weekday mornings are typically a rush, so quick meals are key. Since giving up caffeine last summer, I don’t frequent Starbucks all that much. But, a few months ago, I stopped by to get a decaf coffee and saw these cute, little egg bites in the case. Known as “sous vide egg bites” and with an egg and egg white version to pick from, I thought I would give the egg white version a try. After one bite, I was hooked. Since I loved the Starbucks version, I thought I would try recreating the recipe at home.

Healthy Peanut Butter and Banana Muffins
Last spring, Richard and I went on a “no carb” diet for a few weeks. I can honestly say that it was the most awful thing ever! I love all kinds of carbs and two weeks without them was super difficult for me. However, I did feel better (and lost weight). For me, cutting carbs out of my diet was a great way to detox. Dinner ideas were pretty easy, but no carb breakfast items (besides eggs) was challenging. I stumbled upon a no flour banana muffin recipe on Pinterest and decided to give it a shot. After a few ingredient changes, these healthy peanut butter and banana muffins have become a go-to in both our house and my parent’s for the past year.
Christmas Breakfast Casserole
One of the things I look forward to most on Christmas morning are the breakfast casseroles. I know, it probably sounds crazy, but this is one of the few mornings that it seems alright to indulge in the “not so healthy” breakfast foods. My mom usually makes a french toast bake and egg casserole, both of which are fan favorites. I thought I would take my mom’s usual egg casserole recipe and make a few changes, including adding hash browns, for a different spin. The hash browns were the perfect addition! This new Christmas breakfast casserole might just be the new go-to on Christmas morning.
Baked Pumpkin Donuts
Happy Halloween! I thought these cute and festive baked pumpkin donuts would be a fun recipe to share today given the holiday. But these donuts are not exclusive to Halloween. Make them for the rest of fall and pair them with cider for a yummy fall treat!
Caramel Apple Granola
If you have been following along for awhile, you probably have caught some of my other granola recipes. I love adding granola to my vanilla yogurt so I am always thinking of new ingredients. I started with the original recipe (here) and have made seasonal changes like peanut butter granola and most recently, carrot cake granola. For fall, I wanted something that really represented the flavors of the season. Caramel Apple Granola sounded fitting.
Pumpkin Pie Smoothie
Now that it is October and pumpkin season is in full swing, I thought it was a great opportunity to incorporate another pumpkin recipe into the mix. After making these pumpkin waffles a few weeks ago, I’ve been on a real pumpkin kick. I don’t want to say pumpkin overload, but I feel like I’ve been consuming a lot of pumpkin lately. Last year, I made these pumpkin rolls with caramel frosting as a sweet breakfast treat. But this year, I wanted to try my hand at something a little more from scratch.
