Starbucks Sous Vide Egg Bites

I have always found breakfast foods to be challenging. Weekday mornings are typically a rush, so quick meals are key. Since giving up caffeine last summer, I don’t frequent Starbucks all that much. But, a few months ago, I stopped by to get a decaf coffee and saw these cute, little egg bites in the case. Known as “sous vide egg bites” and with an egg and egg white version to pick from, I thought I would give the egg white version a try. After one bite, I was hooked. Since I loved the Starbucks version, I thought I would try recreating the recipe at home.

Starbucks Sous Vide Egg Bites

While the regular egg version is also available, I always like to stick with egg whites. The egg white bites include spinach, roasted red peppers and Monterey Jack cheese. I loved the combination and figured it would be pretty easy to recreate at home. I am always up for trying a quick and healthy weekday breakfast! To cut down on time, I used a small ramekin that I sprayed with cooking spray before adding the ingredients. I chopped the spinach and roasted red peppers super fine before adding it to the egg white (or in this case, Egg Beaters) mixture, and topped the eggs with Monterey Jack cheese. Pop it in the microwave and in a short 1 minute and 40 seconds, breakfast is ready!

I kept to the same ingredients as the Starbucks version, but this is a great recipe to customize to your liking. And while the original version uses the “sous vide” technique, the microwave gives you a similar taste for a quicker and easier way to enjoy a healthy breakfast from your own kitchen. Instructions
  1. Thoroughly spray the ramekin with cooking spray. Add the egg whites or Egg Beaters to the ramekin, filling just about 2/3 full. Add the spinach and roasted red peppers, stirring to combine. Top with the Monterey Jack cheese. Place in the microwave with microwave-safe cover and cook for 1 minute. Check the doneness and flip the egg over in the ramekin and cook for an additional 30-40 seconds, or until the egg is set. Serve and enjoy!

  1. I get the egg white bites at least once a week, love them (only 170 calories for both!) I was wondering how I could replicate them at home. Your bites look fabulous and I can’t believe it is as easy as that. Yeah, I would have no idea how or want to take the time to do the French technique, lol! I can’t wait to try this easy and yummy method!
