Happy Tuesday, friends! I hope you enjoyed your weekend/long weekend. I just wanted to hop on to share this quick and easy homemade ravioli recipe I have made a few times this winter. Pasta is one of my favorite foods. I probably could eat it every night if it were acceptable, but homemade pasta has always been on my cooking to do list. While this isn’t exactly homemade pasta, it does come pretty close. And it’s a quick and yummy weekend dish.

Christmas Breakfast Casserole
One of the things I look forward to most on Christmas morning are the breakfast casseroles. I know, it probably sounds crazy, but this is one of the few mornings that it seems alright to indulge in the “not so healthy” breakfast foods. My mom usually makes a french toast bake and egg casserole, both of which are fan favorites. I thought I would take my mom’s usual egg casserole recipe and make a few changes, including adding hash browns, for a different spin. The hash browns were the perfect addition! This new Christmas breakfast casserole might just be the new go-to on Christmas morning.

Fall Sheet Pan Dinner
I’ve been on a real kick with the sheet pan and crockpot dinners lately. I love how simple both cooking methods are! For the crockpot, two weeks ago I shared a Loaded Baked Potato Soup that I have made countless times and this week it’s all about the sheet pan dinner. I have shared my love for crockpot dishes before, but I think we have a new favorite in our house. Now that it is fall, I have been trying to do crockpot dinners at least twice a week.
