I have shared my love for crockpot dishes before, but I think we have a new favorite in our house. Now that it is fall, I have been trying to do crockpot dinners at least twice a week. Not only do I love the ease of these recipes, but there is no beating a quick and warm dinner on a cold fall evening. I made this recipe a few weeks ago and have made it twice since. I am officially addicted! After making it for the third time, I think I have finally mastered the combination of ingredients to create the most delicious Loaded Baked Potato Soup!

Easy Crockpot Dinner: Pesto Chicken
Happy Tuesday! Gearing up for a crazy week at my 9-5 job so I thought this quick, weeknight dinner would be a good recipe to share this week. I’m always trying to come up with quick and healthy dinners for the work week and as I have mentioned before, the crockpot is my best friend when it comes to this. I made this a few weeks ago for dinner and we just loved it: only four ingredients for a complete meal, quick and easy and the chicken came out super tender. I’m not the biggest fan of chicken, but it’s tolerable for me in the crockpot. This chicken was delicious and I ate every bite! Totally unusual for me, so this weeknight dinner is highly approved!

Winter and crockpot dinners are like peanut butter and jelly. Although it may not officially be winter, it sure has been cold recently! I’m always trying to come up with crockpot dinners because they are quick and easy with a busy schedule. And this recipe is one of my new favorites! Last weekend, I combined all these ingredients and cannot believe how flavorful this soup was. Nothing you need to prep, just throw it in the crockpot and let it cook. It’s an ideal weeknight dinner!

Crockpots are a lifesaver on weeknights or any day with a busy schedule. At least once a week, I try to make something for dinner in the crockpot. I love being able to throw the ingredients in and just let it cook. Lately, I’ve been on a real soup kick — it’s the perfect warm dinner for a cool fall day. And I couldn’t think of a better way to kick off November than sharing a roasted butternut squash soup with all of you!
