Healthy and quick weeknight dinners are always on my mind, but especially at the start of fall. As I mentioned with last week’s Sheet Pan Chicken Fajitas, I think it’s because I’m preparing for dinner without a grill in the colder months which forces me to come up with quick dinners indoors. This Cauliflower Fettuccine Alfredo is a spin on the traditional Fettuccine Alfredo but with a fraction of the calories. A relatively guilt-free dinner, you will find yourself reaching for seconds without feeling bad about it!
Happy Tuesday! Gearing up for a crazy week at my 9-5 job so I thought this quick, weeknight dinner would be a good recipe to share this week. I’m always trying to come up with quick and healthy dinners for the work week and as I have mentioned before, the crockpot is my best friend when it comes to this. I made this a few weeks ago for dinner and we just loved it: only four ingredients for a complete meal, quick and easy and the chicken came out super tender. I’m not the biggest fan of chicken, but it’s tolerable for me in the crockpot. This chicken was delicious and I ate every bite! Totally unusual for me, so this weeknight dinner is highly approved!
Every family has traditions when it comes to food. For me, it was very rare that we did not sit down as a family for dinner each night growing up. Now, with busy lifestyles, family dinner time seems to be a thing of the past. And although we do not have kids yet, my husband and I make it a point to sit together nearly every night for dinner, no matter what our schedules entail. Full disclosure: I am typically not making a “from scratch” meal each night. With both of our hectic calendars, I am constantly trying to come up with quick recipes and shortcuts to cut down on my time in the kitchen.
If you have not noticed by now, my love for pasta goes pretty deep — I usually try to incorporate a pasta dish at least once into our weekly menu. Since making a batch of homemade sauce on a weeknight is not an option, you can usually find me in the pasta sauce aisle searching for a sauce that has that homestyle flavor in a jar.
