It’s hard to believe tomorrow is the first day of August. Where has this summer gone?! With only a few weeks of summer remaining, here are 6 recipes to try before the end of summer.
6 Recipes to Try Before the End of Summer
Peach Caprese Salad
see the recipe here
I will never turn down a Caprese Salad (see below!) and this fun spin is a summer must-have. It’s best to take advantage of the peaches while they are in season. Although, I made these pretty early on in the season when the peaches weren’t particularly ripe, and it was still delicious! Served with mozzarella, basil and balsamic vinegar, this is a fresh summer salad you won’t want to miss. See the recipe here.
Reese’s Peanut Butter S’mores

S’mores are synonymous with summer, and this fun spin on the traditional s’more recipe is my new favorite. I don’t know that I can go back to the regular s’mores now! The way the chocolate and peanut butter melt with the warm marshmallow is heavenly. If Reese’s Peanut Butter Cups aren’t your thing, try it with your favorite candy bar instead! See the recipe here.
Summer Watermelon Salad

Arguably one of my favorite side dishes of all time (definitely my favorite summer side!), this Summer Watermelon Salad has all the summer flavors in one dish. While so many summer dishes are on the heavy side, this is a light and refreshing side dish that will pair perfectly with your next BBQ. See the recipe here.
Grilled Caprese Salad

I told you I never turn down a Caprese Salad! I shared this Grilled Caprese Salad recipe last year and it is still one my favorite ways to enjoy a traditional caprese salad. The flavors of the tomato, mozzarella and basil are always delicious, but when the tomatoes are grilled, it takes the caprese salad to a new level. The warm tomatoes melt the mozzarella slightly and the flavor is just amazing. See the recipe here.
Easy Cheeseburger Kabobs

I shared this bite-sized and deconstructed version of cheeseburgers just a few weeks ago on the blog. But it seemed wrong to not include a cheeseburger recipe in a round-up of summer recipes. Totally customizable, these Cheeseburger Kabobs work well for any weeknight dinner, but are also perfect for a summer party. I am always drawn to bite-sized recipes for parties and the kabob presentation is so fun! See the recipe here.
Frozen S’mores

I know. A second s’more recipe! But, since s’mores are best enjoyed in the summer, these Frozen S’mores seemed only right to include in the round-up. I used my favorite “not so bad for you” ice cream for a cool spin on this summer classic. See the recipe here.
