It’s crazy to think that the Fourth of July is just over a week away. I feel like summer just started and it’s already flying by. New food posts will be resuming soon, but in the meantime, here are some of my favorite Fourth of July recipes:

Whether it is the Fourth of July or any summer BBQ, there are always some must-have menu items. Our summer BBQ go-to items usually include cheeseburgers, hot dogs and of course, lots of sides. But, if you are looking for a change up when it comes to the usual menu, here are some of my favorite Fourth of July or summer BBQ recipes:

Easy Cheeseburger Kabobs

This bite-sized version is a fun spin on the all-American classic cheeseburger. Great for any summer BBQ and can be served as a main dish or even an appetizer. And while these cheeseburger kabobs are totally customizable, I stuck with the traditional cheese, lettuce, tomato and pickle. Summer Watermelon Salad

It’s hard to say what my favorite summer BBQ side dish is, but this watermelon salad has to be close to the top. This salad is cool and refreshing and the perfect way to beat the summer heat. I love how the lime juice dressing brings out the flavor of the watermelon and the pistachios give the salad an added crunch. This is one side dish that I look forward to each summer! Peach Caprese Salad

In general, there are few salads I love more than a caprese salad. It’s my go-to item at any restaurant! And while I don’t think any spin on the traditional caprese salad will take the cake for me, this Peach Caprese Salad sure comes close. Especially when peaches are in season. Peaches are one of my favorite fruits and I try to incorporate them into as many recipes, desserts and side dishes as possible during the warmer months. This is a super simple salad to toss together, yet it looks (and tastes!) much more complicated. See this Peach Caprese Salad post and recipe here.

Chicken Sausage Sandwich with Peppers & Onions

At least once a week, I make al fresco’s chicken sausage on the grill. It’s definitely one of our go-to summer dinners. I like to serve it a few different ways, but topping the Italian chicken sausage with peppers and onions to make the most delicious chicken sausage sandwiches is by far a favorite. Cauliflower “Potato” Salad

One of the things I love most about sharing recipes with you is coming up with healthier alternatives to some of our favorite foods. Whether it be Zoodle Mac and Cheese (see post here) or Cauliflower Mac and Cheese (see post here), I love healthier spins on traditional dishes. For us, potato salad is a summer BBQ favorite. However, it’s not the healthiest. Swapping out a few ingredients gives you this better for you “potato” salad that is a pretty good match for the traditional side.   2. All of these recipes look soo good, especially the cauliflower potato salad! I’ve made those cheeseburger kabobs before and they’re always a hit!
