After a weekend full of holiday cooking, I have a few holiday recipes to share with you in the coming weeks. Tis the season, right?! But before we jump into those, I wanted to recap a few of my favorite recipes of Christmas past. I’ve been on a real kick with the sheet pan and crockpot dinners lately. I love how simple both cooking methods are! For the crockpot, two weeks ago I shared a Loaded Baked Potato Soup that I have made countless times and this week it’s all about the sheet pan dinner. I wanted to incorporate some of my favorite fall vegetables into a dinner a few weeks ago and came up with this delicious and healthy mix of fall flavors for the ultimate fall sheet pan dinner.

I have shared my love for crockpot dishes before, but I think we have a new favorite in our house. Now that it is fall, I have been trying to do crockpot dinners at least twice a week. Not only do I love the ease of these recipes, but there is no beating a quick and warm dinner on a cold fall evening. I made this recipe a few weeks ago and have made it twice since. Can you believe Halloween is just two weeks away? It feels like just yesterday I was sharing last year’s Halloween-inspired recipe with you (you can see that here). Caramel corn is one of my favorite treats year-round, but especially in the fall. Since the Churro Cupcakes were such a hit back in the spring, I thought I would share another cupcake recipe with you today. If you have been following along for awhile, you probably have caught some of my other granola recipes. I love adding granola to my vanilla yogurt so I am always thinking of new ingredients. I started with the original recipe (here) and have made seasonal changes like peanut butter granola and most recently, carrot cake granola. For fall, I wanted something that really represented the flavors of the season. Caramel Apple Granola sounded fitting.
Now that it is October and pumpkin season is in full swing, I thought it was a great opportunity to incorporate another pumpkin recipe into the mix. After making these pumpkin waffles a few weeks ago, I’ve been on a real pumpkin kick. I don’t want to say pumpkin overload, but I feel like I’ve been consuming a lot of pumpkin lately.
