Today I wanted to recap a few of my favorite and most popular healthy summer recipes. Healthy food doesn’t have to be complicated to make — I love that all these recipes are quick and simple. Avocado Toast: 4 Ways
There are few things in life that are more delicious than avocados. I don’t know about you, but I’m sure that I could eat an avocado or guacamole at least once a day and never get sick of it. As much as I love chips and guacamole, I think I have found a new and better way to enjoy avocados. Avocado Toast: 4 Ways.
Mac & Cheese Spaghetti Squash
My love for comfort food {mac and cheese in particular} runs deep. And as much as I love this “not so good for you food” and would be fine eating it most days of the week, that can’t actually happen in reality. Instead, I like to come up with ways to make comfort food not so guilty. I’ve tried cauliflower mac and cheese {recipe HERE} and zucchini mac and cheese {recipe HERE} so I figured it was time to try another vegetable: spaghetti squash.
Mexican Chicken Burrito Bowls
After reading through the reader surveys {thank you again for filling those out!} there was definitely a trend when it came to food posts: make ahead lunches and quick dinners were the clear winners. I can’t say that I’m too surprised about this because this is the stuff I’m always trying to come up with too! In this spirit, I came up with a Mexican Chicken Burrito Bowl that is not only a make ahead lunch, but also the perfect crockpot dinner!Read More
Roasted Cauliflower Winter Salad
Lately, I have been on a healthy recipe planning kick {you may remember the quinoa pizza crust recipe from last week}. And in today’s post, I am combining a few of my very favorite ingredients to create a healthy and delicious winter salad.
Zoodle Mac & Cheese
Another Tuesday, another zoodle recipe! You may remember this recipe from a few weeks ago, and since then, I just can’t get zoodles off my mind! Not only are zoodles healthier than pasta, they are so much fun to make. {I used this spiralizer & it’s currently on sale!} I am always on a quest to find healthier versions of some of my favorite comfort foods, and this might be my favorite yet! It’s still the same basic cheese sauce recipe, but by swapping out the pasta for zucchini, it’s much more carb friendly. Check out the recipe below!
