Cooking during quarantine. I (obviously) love cooking, but dinners during quarantine can be tough. In the world before the virus, I cooked dinner at home just about every night and really enjoyed it. However, I have to admit, I am sick of doing dishes haha! Today I am rounding up some dinners during quarantine.
Dinners During Quarantine
While we have had spaghetti and meatballs and breakfast for dinner quite a few times, here are a few dinners during quarantine that are easy to make and can really be customized to what you have in your fridge or pantry:
Sheet Pan Chicken Fajitas

Chicken fajitas are great if you are looking for something quick and easy. Toss chicken with your favorite spices and add peppers and an onion if you have it. And if you don’t feel like tortillas, you can use the chicken and vegetables to top your salad. I recently picked up these tostada bowls and love to add our favorite cilantro rice with lettuce, chicken and vegetables. While this particular recipe is for a sheet pan chicken, you can easily cook chicken in the oven, crockpot or even the grill. Grilled Chicken Sausage Sandwiches

One of our favorite dinners, regardless of the season, is chicken sausage. Whether served as a sandwich or on a sheet pan, chicken sausage is one of go-to meals. Since the weather has been nice, it’s great to be able to use the grill again. These grilled chicken sausage sandwiches are delicious with the peppers and onions, and a super quick dinner option!
Mexican Lasagna Roll Ups

We have been eating a good amount of pasta casseroles, too. Most recipes make a lot, so it’s great for leftovers. If you are looking for something a little different from your usual pasta dish, these Mexican Lasagna Roll Ups are delicious! These roll ups are similar to enchiladas, but we switch it up a little with lasagna instead of the tortilla. We love our Mexican food — that’s one thing that hasn’t changed during quarantine!
Loaded Baked Potato Pizza

Last, but certainly not least, pizza Fridays are still on in our house! Although, they have been meatless during Lent, I’m very much looking forward to having this Loaded Baked Potato Pizza next Friday! I’ve been doing a lot of vegetable-based pizzas that are good, but a meat pizza will be delicious right about now. And I’m not even a huge meat fan! You can see more of my favorite pizza recipes here. I do realize I could make pizza on different night of the week, but it just wouldn’t be the same! Pizza Fridays have been a tradition for nearly nine years, so I feel like I can’t switch the day now.
