Happy New Year, friends! I hope you all enjoyed the holiday and your 2018 is off to a great start. I don’t know about you, but after all the sweets and unhealthy eating I have done over the past week, I am in serious need of some healthy food. Between eating out and Christmas cookies, it’s easy to get off track during the holidays. So if you are like me and are looking for some healthy recipe inspiration, this post is for you! From a winter salad and quinoa pizza crust to a go-to roasted vegetable sheet pan dinner and cauliflower fettuccine, these recipes will help get your dinner planning off to a great start in 2018.
Roasted Cauliflower Winter Salad

Nothing says a light meal like a salad and this winter salad with roasted cauliflower, avocado and chickpeas is a favorite of ours. I love cauliflower all year round (see my favorite Cauliflower Mac and Cheese recipe here), but roasted is probably one of my favorite ways to prepare the vegetable. This salad will be making an appearance in our weekly dinner lineup in the next week. Even though it is a salad, the toppings of cauliflower, chickpeas and avocado are quite filling. Quinoa Pizza Crust

If you have been following along for awhile, you probably know that Friday nights are pizza night in our house. I love coming up with different pizza recipes each week, but I don’t often switch up the crust options. Depending on what toppings you use, the crust is usually the most unhealthy part of pizza. I made this quinoa pizza crust last year and until I was sorting through my 2017 recipes for this post, I totally forgot about it! It’s not an identical replacement for the real pizza crust, but a healthy option that tastes pretty good. Customize the pizza to your liking with your favorite toppings, but my go-to is always a Caprese style pizza. You can see the original post here.
Sheet Pan Dinner: Chicken Sausage, Brussels Sprouts & Butternut Squash

Although I shared this sheet pan dinner as a yummy fall recipe, this quick and healthy recipe also works for the rest of winter, too. I have raved about al fresco chicken sausages in the past, including in this summer recipe. I pick up this chicken sausage each week at the grocery store and loving coming up with different ways to serve this healthier sausage. When it comes to deciding on a favorite preparation method for the chicken sausage, it’s without a doubt the sheet pan. Cauliflower Fettuccine Alfredo

I am always looking for ways to enjoy some of my favorite comfort foods in healthier ways. From Zoodle Mac and Cheese (recipe here) to Cauliflower Mac and Cheese (recipe here), I love finding ways to enjoy these favorites in less guilty ways. I made this Cauliflower Fettuccine Alfredo a few months ago and it’s amazing how cauliflower can be used to mimic the thick and rich texture of a traditional Alfredo sauce.
