Happy Tuesday, friends! Yes, my obsession with sheet pan dinners is real. I have tried quite a few sheet pan recipes, but I think this is our favorite one yet. I have been making it once a week for the past few months because it’s so good! This Italian Chicken Sausage Sheet Pan Dinner is perfect for a cold winter night and goes well with both rice and pasta.
Italian Chicken Sausage Sheet Pan Dinner
Not only are we huge fans of sheet pan dinners, but also al fresco chicken sausage! I’ve shared my love for these chicken sausages in this post and this post, but it really is my favorite meat to use in sheet pan dinners. I think part of the reason is that I slice the chicken sausage into pieces that are similar in size to the vegetables, which allows everything to cook evenly.
Each time I make this dinner, I add a different vegetable to the mix! But I think I have found the perfect combination with this mix. And aren’t the colors so pretty?! Before roasting the vegetables, I toss them with the chicken sausage, olive oil, Italian seasoning, garlic and salt and pepper. And once the sheet pan is done cooking, I add grated Parmesan cheese to the top which makes it so irresistible. I usually serve this with brown rice, but I once served it with pasta and it was delicious!

- 1/2 cup broccoli, cut into florets
- 1/2 cup cauliflower, cut into florets
- 1 yellow pepper
- 1 pint grape tomatoes
- 1 yellow onion, sliced
- 1 package alfresco Italian chicken sausage
- 3-4 tablespoons olive oil
- 1/2 tablespoon Italian seasoning
- 1/4 tablespoon garlic powder
- salt and pepper, to taste
- 3 tablespoons Parmesan cheese, grated

- Preheat the oven to 400 degrees. In a large bowl, toss the vegetables and chicken sausage. Add the olive oil, Italian seasoning, garlic powder and salt and pepper. Stir to completely combined. Lightly spray a rimmed baking sheet with cooking spray and transfer the vegetable and chicken sausage mixture to the baking sheet. Cook for 20 minutes, stir the mixture, and cook for an additional 20 minutes, or until the vegetables and chicken sausage are golden brown. Serve with a side of rice or pasta.
