Post-Labor Day and the unofficial welcoming of fall has arrived. Fall is my favorite season for many reasons but two of the top can be broken down into two categories: food and fashion. Imagine that? As much as I love grilling during the summer, I am looking forward to dinners in the crockpot and oven. When it comes to baking dinner in the oven, I always try to come up with recipes that have quick bake times or are at least easy to put together. If they are quick to put together and have a longer bake time, at least you can accomplish tasks while dinner bakes. I have shared our love for Mexican food with you before but these sheet pan chicken fajitas take quick weeknight dinners to a whole new level.

Weeknight Summer Dinner with al fresco
As summer is quickly coming to an end, one of the things I will miss most about the warmer temperatures is quick weeknight dinners on the grill. The grill has become our go-to the past few months. You can’t beat how much of a time saver it is! Once a week, we reach for one of our favorite summer meals on the grill, al fresco chicken sausage. I always love coming up with new ways to serve this “better for you” sausage, but this sweet Italian style has become our favorite. Today, I am sharing the perfect quick weeknight summer dinner with al fresco.
Easy Weeknight Dinner: Cheeseburger Burritos
No matter the season, I am always on a quest for quick weeknight dinners. Summer recipes have been a little easier since we can use the grill, but that isn’t an option for every night. We were planning to have burgers on the grill one day last week until a storm hit. Instead of grilling in the rain, I came up with this easy weeknight dinner: cheeseburger burritos.

Ragu Traditions: Chicken Parmesan Meatballs
Every family has traditions when it comes to food. For me, it was very rare that we did not sit down as a family for dinner each night growing up. Now, with busy lifestyles, family dinner time seems to be a thing of the past. And although we do not have kids yet, my husband and I make it a point to sit together nearly every night for dinner, no matter what our schedules entail. Full disclosure: I am typically not making a “from scratch” meal each night. With both of our hectic calendars, I am constantly trying to come up with quick recipes and shortcuts to cut down on my time in the kitchen.
