Happy Monday, friends! One of our resolutions for 2020 was to try to eat more plant-based foods during the week. And to be perfectly honest, it’s been challenging! And although this particular recipe does not have any plant-based protein, it doesn’t have meat, so we are placing this in the win column! This lemon pepper pappardelle is one of my all-time favorite finds at Trader Joe’s and I love finding new ways to enjoy this delicious pasta. Roasted Fall Vegetable Pasta
With fall in full swing in Northern Virginia, I have been searching for all my fall recipes to make. It’s the season of comfort food (did you catch my lighter version of fall comfort food post here?) but that doesn’t mean comfort food has to be unhealthy. I picked up some of my favorite fall vegetables at Trader Joe’s the other week to create the most delicious roasted fall vegetable pasta. This pasta truly captures all the flavors of the season and I couldn’t be more excited for it!
My Go-To Berry Protein Smoothie
I have always been a fan of smoothies. Throughout college and after moving to D.C., I was a frequent customer at Jamba Juice and Robeks. I had a difficult time making smoothies at home: between having the ingredients in the fridge to not knowing the exact proportions, I found it easier to buy them from a smoothie shop. Totally not economical! That was until I discovered Orgain Organic Protein Powder about a year ago. It totally changed my smoothie game and now I have a smoothie at home at least four times per week! We have been on a real Mexican food kick the past few weeks. No matter what time of the year, we probably eat Mexican at least one time per week. It’s one of our favorites! But since it is summer and we are able to use the grill, I am trying to use it as much as possible. There is nothing like summer side dishes. The fresh vegetables and light flavors of summer sides are the perfect addition to any meal. Especially a meal on the grill. Corn on the cob is probably one of my favorite side dishes of summer. But of all the corn on the cob I have had in my life, this Mexican Style Street Corn takes first place in my heart.

Buffalo Chicken Cauliflower Rice
These days, I feel like a cauliflower rice expert. Richard has been embracing the Keto diet for about two months now. I lasted a little over a week (haha – I can’t live without carbs!) but I’m so impressed with his commitment to this lifestyle change. Dinners can be challenging, but cauliflower rice has become one of our best friends. It’s something he can eat while on Keto and something I actually like. Whether it’s served as a side or as the main course, this buffalo chicken cauliflower rice is a new favorite.

Weeknight Sheet Pan Beef Fajitas
Taking a break from the grilled recipes today to share a new favorite in our house. I have shared my love for sheet pan dinners (most recently here) a few times here on the blog. It’s my go-to for weeknight dinners. We recently discovered this beef sirloin for fajitas at Wegmans and fell in love. The first few times I made it, I sauteed the beef and pepper mixture in a skillet. However, I realized it would be just as good in the oven for the an easy, weeknight sheet pan dinner!
