As summer begins to wind down, I have been trying to work in all our favorite summer recipes while I can. We usually have pizza once a week on Fridays, so I am trying to fill the next few Fridays with a few summer pizza recipes. After find squash for a great price at the store, I stocked up. It’s one of my favorite vegetables to add to our cauliflower rice (more about cauliflower rice here) which has been our go-to for weeknight meals lately. Having some squash left over, I decided to incorporate this vegetable into a pizza. This Summer Squash Pizza is a fresh and delicious summer pizza recipe.

Buffalo Chicken Cauliflower Rice
These days, I feel like a cauliflower rice expert. Richard has been embracing the Keto diet for about two months now. I lasted a little over a week (haha – I can’t live without carbs!) but I’m so impressed with his commitment to this lifestyle change. Dinners can be challenging, but cauliflower rice has become one of our best friends. It’s something he can eat while on Keto and something I actually like. Whether it’s served as a side or as the main course, this buffalo chicken cauliflower rice is a new favorite.
6 Recipes to Try Before the End of Summer
It’s hard to believe tomorrow is the first day of August. Where has this summer gone?! With only a few weeks of summer remaining, here are 6 recipes to try before the end of summer.
Limeade Popsicles
It has been a lot few weeks here in D.C. After starting the summer off on a cool and rainy note, the traditional D.C. heat and humidity came back a few weeks ago in full force. I’m always looking for ways to beat the heat, whether it is with cool dress or summertime treats and these limeade popsicles. The perfect cooling dessert or snack, you will be making this easy recipe for the rest of summer!
Grilled Peaches with Vanilla Ice Cream
Ever since I shared this Peach Caprese Salad, I’ve been craving peaches. Summer is the season for them after all! A few weeks ago, I was dreaming of the Southern Peach Cake I shared with you last summer trying to think of a way to enjoy a peach dessert without all the calories. Enter these grilled peaches with vanilla ice and a delicious cinnamon sauce. The perfect summer dessert and an excuse to fire up your grill for something other than hamburgers!
Weeknight Sheet Pan Beef Fajitas
Taking a break from the grilled recipes today to share a new favorite in our house. I have shared my love for sheet pan dinners (most recently here) a few times here on the blog. It’s my go-to for weeknight dinners. We recently discovered this beef sirloin for fajitas at Wegmans and fell in love. The first few times I made it, I sauteed the beef and pepper mixture in a skillet. However, I realized it would be just as good in the oven for the an easy, weeknight sheet pan dinner!
Best Summer BBQ Sides
The Fourth of July is tomorrow and if you are still looking for some side dishes to serve tomorrow or at your next cookout, here are the best summer BBQ sides!
Kale Caesar Salad
A salad I have been making for years, this Kale Caesar Salad makes for a great summer dish. Swapping a few ingredients from the traditional recipe yields a yummy and healthier version of a classic salad.
Easy Cheeseburger Kabobs
It’s hard to believe the Fourth of July is just around the corner. Wasn’t it just Memorial Day? Regardless, it’s time to take advantage of all the BBQ dishes! I always love to share recipes with a different spin, so when I was coming up with ideas for recipes, I wanted to try a spin on the traditional summer dish, cheeseburgers. I’ve shared several versions of veggie burgers, but since the Fourth of July is the perfect time for get-togethers, you might be looking for bite-sized dishes to serve your guests. A deconstructed burger, these cheeseburger kabobs are the perfect food to serve at your Fourth of July party or any summer party!
Starbucks Sous Vide Egg Bites
I have always found breakfast foods to be challenging. Weekday mornings are typically a rush, so quick meals are key. Since giving up caffeine last summer, I don’t frequent Starbucks all that much. But, a few months ago, I stopped by to get a decaf coffee and saw these cute, little egg bites in the case. Known as “sous vide egg bites” and with an egg and egg white version to pick from, I thought I would give the egg white version a try. After one bite, I was hooked. Since I loved the Starbucks version, I thought I would try recreating the recipe at home.
