Well hello, friends! It has been a crazy few months, but I am back to share a special Thanksgiving post. How can Thanksgiving be NEXT week? It’s amazing that 2020 seems like it has gone so fast, yet it also feels like it has been the longest year. Today, I am sharing a few of the best Thanksgiving recipes. Not your typical Thanksgiving recipes of stuffing and cranberry sauce, but here are a few dishes that work for not only Thanksgiving, but the entire fall season.

Dinners During Quarantine
Cooking during quarantine. I (obviously) love cooking, but dinners during quarantine can be tough. In the world before the virus, I cooked dinner at home just about every night and really enjoyed it. However, I have to admit, I am sick of doing dishes haha! Today I am rounding up some dinners during quarantine.
Lemon Pepper Pappardelle with Asparagus and Basil
Happy Monday, friends! One of our resolutions for 2020 was to try to eat more plant-based foods during the week. And to be perfectly honest, it’s been challenging! And although this particular recipe does not have any plant-based protein, it doesn’t have meat, so we are placing this in the win column! This lemon pepper pappardelle is one of my all-time favorite finds at Trader Joe’s and I love finding new ways to enjoy this delicious pasta. Here is my super easy weeknight Lemon Pepper Pappardelle wth Asparagus and Basil recipe:
The Best Healthy Recipes for the New Year
The new year brings a fresh start and for many people, a new year means New Year’s resolutions that include healthy eating. Although I have several favorite healthy recipes, today I am rounding up a few of my favorites. Here are the best healthy recipes for the new year:
Loaded Baked Potato Pizza
If you have been following along for awhile now, you probably already know that in the McCarthy household, we eat pizza on Fridays. It has been a tradition for over 8 years and is something we look forward to each week. I love coming up with different recipes each week. You can see the entire collection of pizza recipes here. This loaded baked potato pizza has been on repeat lately.
How to Create a Fall Cheese Board
One of my favorite appetizers to make when we have company over is a cheese board. It’s easy to throw together, delicious, and can really be customized to you and your company’s preferences. With the change of seasons, I thought it would be fun to make a cheese board that included some fall flavors. Here is how to create a fall cheese board:
Roasted Fall Vegetable Pasta
With fall in full swing in Northern Virginia, I have been searching for all my fall recipes to make. It’s the season of comfort food (did you catch my lighter version of fall comfort food post here?) but that doesn’t mean comfort food has to be unhealthy. I picked up some of my favorite fall vegetables at Trader Joe’s the other week to create the most delicious roasted fall vegetable pasta. This pasta truly captures all the flavors of the season and I couldn’t be more excited for it!
Fall Finds from Trader Joe’s
Now that the temperatures are beginning to feel like fall, it finally feels acceptable to enjoy some of fall’s best flavors. Let’s be honest though, I’ve been drinking pumpkin coffee and eating pumpkin flavored everything for the past few weeks now! I always love checking out Trader Joe’s food selection (you can see my last Trader Joe’s haul here), but their fall inspired foods are always some of my favorites. Here are this year’s Fall Finds from Trader Joe’s.
4 Healthy Spins on Fall Comfort Food
With fall just around the corner, we are entering the time of year when I start to crave comfort food. Well, let’s be honest. There are some comfort foods I crave year-round! And as much as I would love to eat these comfort foods ALL.THE.TIME., it’s not very realistic. Today, I am rounding up four of my favorite healthy spins on fall comfort food. These recipes make you think you are enjoying the traditional recipe, without all the guilt.
Chicken Street Tacos
We have been on a real Mexican food kick the past few weeks. No matter what time of the year, we probably eat Mexican at least one time per week. It’s one of our favorites! But since it is summer and we are able to use the grill, I am trying to use it as much as possible. Taking recipes that I usually make in the kitchen and moving them to the grill has been a fun spin on our usual weekly menu lineup. A few weeks ago, I shared the Mexican Style Street Corn (see that recipe here). And today I’m continuing the trend of Mexican on the grill with these Chicken Street Tacos.Read More
