Pumpkin Pie Smoothie
Now that it is October and pumpkin season is in full swing, I thought it was a great opportunity to incorporate another pumpkin recipe into the mix. After making these pumpkin waffles a few weeks ago, I’ve been on a real pumpkin kick. I don’t want to say pumpkin overload, but I feel like I’ve been consuming a lot of pumpkin lately. Healthy and quick weeknight dinners are always on my mind, but especially at the start of fall. As I mentioned with last week’s Sheet Pan Chicken Fajitas, I think it’s because I’m preparing for dinner without a grill in the colder months which forces me to come up with quick dinners indoors. This Cauliflower Fettuccine Alfredo is a spin on the traditional Fettuccine Alfredo but with a fraction of the calories. A relatively guilt-free dinner, you will find yourself reaching for seconds without feeling bad about it!
Peanut Butter Power Bars
It’s no secret that my love for peanut butter runs pretty deep. I eat it at least once a day and I am always look for excuses to eat more. Peanut butter power bars were always my go-to snack while playing college tennis. Now, they are my favorite pre- and post-workout snack. Last weekend, my mom and I decided to remake the power bar recipe from college and switch up the ingredients. Since we lost the original recipe, it was a good excuse to create our own. As much as I loved the power bars in college, I am completely addicted to this new peanut butter power bar version.
Weeknight Summer Dinner with al fresco
As summer is quickly coming to an end, one of the things I will miss most about the warmer temperatures is quick weeknight dinners on the grill. The grill has become our go-to the past few months. You can’t beat how much of a time saver it is! Once a week, we reach for one of our favorite summer meals on the grill, al fresco chicken sausage. I always love coming up with new ways to serve this “better for you” sausage, but this sweet Italian style has become our favorite.
